Abstract

Ecuador has a very rich, abundant and varied gastronomic culture. An authentic and mixed-race meal, cooked alike in clay pots and old smoked Castilian pots. In short, a cuisine with centuries of tradition and in which substances, condiments and experiences from its own and from distant continents have been melted or, better still, cooked.
